Promu pendant des d\u00e9cennies comme un incontournable pour la croissance, la solidit\u00e9 des os et l\u2019apport en calcium, il occupe une place centrale dans nos habitudes alimentaires, en particulier chez les enfants et les personnes \u00e2g\u00e9es.<\/p><p data-start=\"699\" data-end=\"908\">Mais aujourd\u2019hui, de nombreuses <strong data-start=\"731\" data-end=\"772\">voix scientifiques et naturopathiques<\/strong> remettent en question sa place dans une alimentation \u00e9quilibr\u00e9e. Alors, <strong data-start=\"845\" data-end=\"908\">faut-il vraiment boire du lait pour rester en bonne sant\u00e9 ?<\/strong><\/p><hr data-start=\"910\" data-end=\"913\" \/><h2 data-start=\"915\" data-end=\"959\">1. Le lait, un aliment destin\u00e9&#8230; au veau<\/h2><p data-start=\"961\" data-end=\"1182\">Biologiquement, le lait de vache est un aliment produit pour nourrir un veau : riche en graisses, en prot\u00e9ines et en facteurs de croissance, il est con\u00e7u pour permettre \u00e0 un veau de tripler son poids en quelques semaines.<\/p><p data-start=\"1184\" data-end=\"1419\">Chez l\u2019humain, la consommation de lait d\u2019une autre esp\u00e8ce n\u2019est <strong data-start=\"1248\" data-end=\"1281\">ni naturelle ni indispensable<\/strong>, m\u00eame si elle a \u00e9t\u00e9 rendue possible par l\u2019\u00e9volution culturelle et, dans certains cas, une adaptation g\u00e9n\u00e9tique \u00e0 la digestion du lactose. Etrangement, la capacit\u00e9 \u00e0 dig\u00e9rer le lait est un g\u00e8ne r\u00e9cessif, les deux parents doivent le dig\u00e9rer pour transmettre cette capacit\u00e9.<\/p><hr data-start=\"1421\" data-end=\"1424\" \/><h2 data-start=\"1426\" data-end=\"1495\">2. Lactose, cas\u00e9ine : pourquoi le lait est mal tol\u00e9r\u00e9 par beaucoup<\/h2><h3 data-start=\"1497\" data-end=\"1511\">Le lactose<\/h3><p data-start=\"1512\" data-end=\"1681\">C\u2019est le <strong data-start=\"1521\" data-end=\"1538\">sucre du lait<\/strong>. Il est dig\u00e9r\u00e9 gr\u00e2ce \u00e0 une enzyme, la <strong data-start=\"1577\" data-end=\"1588\">lactase<\/strong>, qui diminue naturellement apr\u00e8s l\u2019enfance chez une grande partie de la population mondiale, apr\u00e8s le sevrage.<\/p><ul data-start=\"1683\" data-end=\"1916\"><li data-start=\"1683\" data-end=\"1768\"><p data-start=\"1685\" data-end=\"1768\"><strong data-start=\"1685\" data-end=\"1698\">En France<\/strong>, 30 \u00e0 40 % des adultes auraient une <strong data-start=\"1735\" data-end=\"1767\">tol\u00e9rance r\u00e9duite au lactose<\/strong>.<\/p><\/li><li data-start=\"1769\" data-end=\"1916\"><p data-start=\"1771\" data-end=\"1916\"><strong data-start=\"1771\" data-end=\"1788\">Dans le monde<\/strong>, pr\u00e8s de <strong data-start=\"1798\" data-end=\"1846\">70 % de la population adulte est intol\u00e9rante<\/strong> \u00e0 des degr\u00e9s divers (source : <em data-start=\"1877\" data-end=\"1914\">National Institutes of Health, 2020<\/em>).<\/p><\/li><\/ul><p data-start=\"1918\" data-end=\"2008\">Les sympt\u00f4mes d\u2019intol\u00e9rance incluent : ballonnements, gaz, diarrh\u00e9e, douleurs abdominales\u2026 Mais \u00e9galement maladies auto-immunes, psoriasis, ecz\u00e9ma etc.<\/p><h3 data-start=\"2010\" data-end=\"2024\">La cas\u00e9ine<\/h3><p data-start=\"2025\" data-end=\"2148\">C\u2019est la <strong data-start=\"2034\" data-end=\"2065\">prot\u00e9ine principale du lait<\/strong>. Elle est <strong data-start=\"2076\" data-end=\"2104\">tr\u00e8s difficile \u00e0 dig\u00e9rer<\/strong> pour beaucoup d\u2019adultes et peut provoquer :<\/p><ul data-start=\"2149\" data-end=\"2296\"><li data-start=\"2149\" data-end=\"2180\"><p data-start=\"2151\" data-end=\"2180\">des r\u00e9actions inflammatoires,<\/p><\/li><li data-start=\"2181\" data-end=\"2211\"><p data-start=\"2183\" data-end=\"2211\">des troubles ORL chroniques,<\/p><\/li><li data-start=\"2212\" data-end=\"2251\"><p data-start=\"2214\" data-end=\"2251\">des probl\u00e8mes cutan\u00e9s (ecz\u00e9ma, acn\u00e9),<\/p><\/li><li data-start=\"2252\" data-end=\"2296\"><p data-start=\"2254\" data-end=\"2296\">une perturbation du microbiote intestinal.<\/p><\/li><\/ul><hr data-start=\"2298\" data-end=\"2301\" \/><h2 data-start=\"2303\" data-end=\"2355\">3. Le lait : pas la meilleure source de calcium ?<\/h2><p data-start=\"2357\" data-end=\"2525\">Le <strong data-start=\"2360\" data-end=\"2400\">principal argument en faveur du lait<\/strong> reste son apport en calcium, essentiel \u00e0 la sant\u00e9 osseuse. Je consid\u00e8re la la sardine en boite comme un super aliments : acide gras polyinsatur\u00e9 et calcium.<\/p><hr data-start=\"3353\" data-end=\"3356\" \/><h2 data-start=\"3358\" data-end=\"3422\">4. Que disent les recommandations officielles ?<\/h2><p data-start=\"4412\" data-end=\"4458\">Les recommandations nutritionnelles \u00e9voluent :<\/p><ul data-start=\"4459\" data-end=\"4751\"><li data-start=\"4459\" data-end=\"4560\"><p data-start=\"4461\" data-end=\"4560\">L\u2019OMS ne consid\u00e8re <strong data-start=\"4480\" data-end=\"4515\">pas le lait comme indispensable<\/strong>, mais plut\u00f4t comme <strong data-start=\"4535\" data-end=\"4559\">un aliment optionnel<\/strong>.<\/p><\/li><li data-start=\"4561\" data-end=\"4751\"><p data-start=\"4563\" data-end=\"4751\">De nombreux experts recommandent de <strong data-start=\"4599\" data-end=\"4632\">varier les sources de calcium<\/strong> (notamment v\u00e9g\u00e9tales) et de <strong data-start=\"4661\" data-end=\"4750\">r\u00e9duire les produits laitiers en cas de troubles digestifs, cutan\u00e9s ou inflammatoires<\/strong>.<\/p><\/li><\/ul><hr data-start=\"4753\" data-end=\"4756\" \/><h2 data-start=\"4758\" data-end=\"4828\">6. En naturopathie : individualiser, pas interdire syst\u00e9matiquement<\/h2><p data-start=\"4830\" data-end=\"4920\">En naturopathie, on ne diabolise pas syst\u00e9matiquement les produits laitiers.
