C\u2019est devenu un slogan de sant\u00e9 publique incontournable. Mais faut-il vraiment suivre ce conseil \u00e0 la lettre ?<br data-start=\"673\" data-end=\"676\" \/>Derri\u00e8re cette injonction bienveillante se cache en r\u00e9alit\u00e9 <strong data-start=\"736\" data-end=\"760\">un message \u00e0 nuancer<\/strong>, notamment du c\u00f4t\u00e9 des fruits, qui contiennent un sucre particulier : le <strong data-start=\"834\" data-end=\"846\">fructose<\/strong>.<\/p><p data-start=\"849\" data-end=\"948\">Plongeons ensemble dans <strong data-start=\"873\" data-end=\"902\">les dessous scientifiques<\/strong> de cette recommandation souvent mal comprise.<\/p><hr data-start=\"950\" data-end=\"953\" \/><h2 data-start=\"955\" data-end=\"1011\">Une recommandation plus politique que scientifique<\/h2><p data-start=\"1013\" data-end=\"1286\">Le fameux \u00ab\u00a05 par jour\u00a0\u00bb est d\u2019abord une <strong data-start=\"1052\" data-end=\"1082\">campagne de sant\u00e9 publique<\/strong> lanc\u00e9e dans les ann\u00e9es 2000 pour inciter \u00e0 consommer davantage de v\u00e9g\u00e9taux. Elle repose sur un consensus nutritionnel large, mais <strong data-start=\"1213\" data-end=\"1242\">pas sur une \u00e9tude pr\u00e9cise<\/strong> indiquant qu\u2019il faut exactement 5 portions.<\/p><p data-start=\"1288\" data-end=\"1424\">Et surtout :<br data-start=\"1300\" data-end=\"1303\" \/><img decoding=\"async\" class=\"emoji\" role=\"img\" draggable=\"false\" src=\"https:\/\/s.w.org\/images\/core\/emoji\/16.0.1\/svg\/1f7e2.svg\" alt=\"\ud83d\udfe2\" \/> <strong data-start=\"1306\" data-end=\"1353\">\u00ab\u00a0Fruits et l\u00e9gumes\u00a0\u00bb ne sont pas \u00e9quivalents<\/strong>.<br data-start=\"1354\" data-end=\"1357\" \/><img decoding=\"async\" class=\"emoji\" role=\"img\" draggable=\"false\" src=\"https:\/\/s.w.org\/images\/core\/emoji\/16.0.1\/svg\/1f534.svg\" alt=\"\ud83d\udd34\" \/> Et <strong data-start=\"1363\" data-end=\"1399\">tous les fruits ne se valent pas<\/strong> sur le plan m\u00e9tabolique.<\/p><hr data-start=\"1426\" data-end=\"1429\" \/><h2 data-start=\"1431\" data-end=\"1472\">Le fructose, ce sucre pas si anodin<\/h2><p data-start=\"1474\" data-end=\"1680\">Le <strong data-start=\"1477\" data-end=\"1489\">fructose<\/strong> est le sucre naturel des fruits. Contrairement au <strong data-start=\"1540\" data-end=\"1551\">glucose<\/strong> (utilisable imm\u00e9diatement par les cellules), le fructose <strong data-start=\"1609\" data-end=\"1653\">doit d\u2019abord \u00eatre transform\u00e9 par le foie<\/strong> avant de servir d\u2019\u00e9nergie.<\/p><p data-start=\"1682\" data-end=\"1717\">Voici pourquoi cela pose probl\u00e8me :<\/p><ul data-start=\"1718\" data-end=\"2012\"><li data-start=\"1718\" data-end=\"1788\"><p data-start=\"1720\" data-end=\"1788\"><img decoding=\"async\" class=\"emoji\" role=\"img\" draggable=\"false\" src=\"https:\/\/s.w.org\/images\/core\/emoji\/16.0.1\/svg\/1f449.svg\" alt=\"\ud83d\udc49\" \/> En petite quantit\u00e9 (1 \u00e0 2 fruits), le foie s\u2019en charge tr\u00e8s bien.<\/p><\/li><li data-start=\"1789\" data-end=\"1870\"><p data-start=\"1791\" data-end=\"1870\"><img decoding=\"async\" class=\"emoji\" role=\"img\" draggable=\"false\" src=\"https:\/\/s.w.org\/images\/core\/emoji\/16.0.1\/svg\/26a0.svg\" alt=\"\u26a0\ufe0f\" \/> Mais \u00e0 haute dose, <strong data-start=\"1813\" data-end=\"1831\">le foie sature<\/strong>, et <strong data-start=\"1836\" data-end=\"1869\">stocke le fructose en graisse<\/strong>.<\/p><\/li><li data-start=\"1871\" data-end=\"2012\"><p data-start=\"1873\" data-end=\"2012\">R\u00e9sultat : <strong data-start=\"1884\" data-end=\"1932\">trop de fructose peut mener \u00e0 un \u00ab\u00a0foie gras\u00a0\u00bb<\/strong>, ou st\u00e9atose h\u00e9patique, m\u00eame chez des personnes qui ne consomment pas d\u2019alcool.<\/p><\/li><\/ul><hr data-start=\"2014\" data-end=\"2017\" \/><h2 data-start=\"2019\" data-end=\"2053\">Et les jus de fruits alors ?<\/h2><p data-start=\"2055\" data-end=\"2178\">Un verre de jus d\u2019orange, c\u2019est <strong data-start=\"2087\" data-end=\"2116\">l\u2019\u00e9quivalent de 3 oranges<\/strong>, bues sans fibres, sans mastication, et en quelques secondes.<\/p><p data-start=\"2180\" data-end=\"2190\">R\u00e9sultat :<\/p><ul data-start=\"2191\" data-end=\"2357\"><li data-start=\"2191\" data-end=\"2254\"><p data-start=\"2193\" data-end=\"2254\">Le foie re\u00e7oit <strong data-start=\"2208\" data-end=\"2253\">une grande quantit\u00e9 de fructose d\u2019un coup<\/strong>.<\/p><\/li><li data-start=\"2255\" data-end=\"2310\"><p data-start=\"2257\" data-end=\"2310\">Il n\u2019a <strong data-start=\"2264\" data-end=\"2309\">pas le temps de le transformer proprement<\/strong>.<\/p><\/li><li data-start=\"2311\" data-end=\"2357\"><p data-start=\"2313\" data-end=\"2357\">Il <strong data-start=\"2316\" data-end=\"2356\">stocke l\u2019exc\u00e8s sous forme de graisse<\/strong>.<\/p><\/li><\/ul><p data-start=\"2359\" data-end=\"2506\">C\u2019est pourquoi m\u00eame les jus \u00ab\u00a0100% pur fruit\u00a0\u00bb ne doivent pas \u00eatre consomm\u00e9s <strong data-start=\"2434\" data-end=\"2453\">quotidiennement<\/strong>, mais <strong data-start=\"2460\" data-end=\"2481\">occasionnellement<\/strong>, comme un petit plaisir.<\/p><hr data-start=\"2508\" data-end=\"2511\" \/><h2 data-start=\"2513\" data-end=\"2577\">Fruits vs l\u00e9gumes : ne les mettons pas dans le m\u00eame panier<\/h2><p data-start=\"2579\" data-end=\"2604\">Les l\u00e9gumes contiennent :<\/p><ul data-start=\"2605\" data-end=\"2713\"><li data-start=\"2605\" data-end=\"2620\"><p data-start=\"2607\" data-end=\"2620\">Peu de sucre,<\/p><\/li><li data-start=\"2621\" data-end=\"2642\"><p data-start=\"2623\" data-end=\"2642\">Beaucoup de fibres,<\/p><\/li><li data-start=\"2643\" data-end=\"2682\"><p data-start=\"2645\" data-end=\"2682\">Des vitamines et min\u00e9raux essentiels,<\/p><\/li><li data-start=\"2683\" data-end=\"2713\"><p data-start=\"2685\" data-end=\"2713\">Et sont tr\u00e8s peu caloriques.<\/p><\/li><\/ul><p data-start=\"2715\" data-end=\"2765\"><img decoding=\"async\" class=\"emoji\" role=\"img\" draggable=\"false\" src=\"https:\/\/s.w.org\/images\/core\/emoji\/16.0.1\/svg\/1f449.svg\" alt=\"\ud83d\udc49\" \/> Ils peuvent \u00eatre consomm\u00e9s <strong data-start=\"2745\" data-end=\"2764\">sans mod\u00e9ration<\/strong>.<\/p><p data-start=\"2767\" data-end=\"2784\">Les fruits, eux :<\/p><ul data-start=\"2785\" data-end=\"3015\"><li data-start=\"2785\" data-end=\"2811\"><p data-start=\"2787\" data-end=\"2811\">Sont riches en fructose,<\/p><\/li><li data-start=\"2812\" data-end=\"2879\"><p data-start=\"2814\" data-end=\"2879\">Varient beaucoup selon leur maturit\u00e9, leur type (banane vs baie),<\/p><\/li><li data-start=\"2880\" data-end=\"3015\"><p data-start=\"2882\" data-end=\"3015\">Et doivent \u00eatre <strong data-start=\"2898\" data-end=\"2935\">consomm\u00e9s en quantit\u00e9 raisonnable<\/strong> : <strong data-start=\"2938\" data-end=\"2971\">1 \u00e0 3 fruits entiers par jour<\/strong>, id\u00e9alement <strong data-start=\"2984\" data-end=\"2994\">m\u00e2ch\u00e9s<\/strong>, et non transform\u00e9s.<\/p><\/li><\/ul><hr data-start=\"3017\" data-end=\"3020\" \/><h2 data-start=\"3022\" data-end=\"3099\">Pourquoi cette prudence est-elle absente des messages grand public ?<\/h2><p data-start=\"3101\" data-end=\"3333\">Parce qu\u2019un message du type \u00ab\u00a0mangez plus de l\u00e9gumes, mais pas trop de fruits, et surtout \u00e9vitez les jus, sauf si vous \u00eates jeune, mince, actif, sans souci h\u00e9patique\u00a0\u00bb\u2026 est <strong data-start=\"3272\" data-end=\"3305\">trop compliqu\u00e9 \u00e0 faire passer<\/strong> dans une campagne de sant\u00e9.<\/p><p data-start=\"3335\" data-end=\"3478\">D\u2019o\u00f9 le slogan simplifi\u00e9 :<br data-start=\"3361\" data-end=\"3364\" \/><img decoding=\"async\" class=\"emoji\" role=\"img\" draggable=\"false\" src=\"https:\/\/s.w.org\/images\/core\/emoji\/16.0.1\/svg\/1f449.svg\" alt=\"\ud83d\udc49\" \/> <strong data-start=\"3367\" data-end=\"3401\">\u00ab\u00a05 fruits et l\u00e9gumes par jour\u00a0\u00bb<\/strong>, qui sonne bien, mais <strong data-start=\"3424\" data-end=\"3478\">m\u00e9rite d\u2019\u00eatre interpr\u00e9t\u00e9 avec un minimum de recul.<\/strong><\/p><hr data-start=\"3480\" data-end=\"3483\" \/><h2 data-start=\"3485\" data-end=\"3524\">Alors, on mange quoi, et combien ?<\/h2><p data-start=\"3526\" data-end=\"3589\">Voici une proposition <strong data-start=\"3548\" data-end=\"3587\">\u00e9quilibr\u00e9e et fond\u00e9e sur la science<\/strong> :<\/p><ul data-start=\"3591\" data-end=\"3910\"><li data-start=\"3591\" data-end=\"3658\"><p role=\"img\" draggable=\"false\" src=\"https:\/\/s.w.org\/images\/core\/emoji\/16.0.1\/svg\/274c.svg\" alt=\"\u274c\" \/> Limiter les <strong data-start=\"3766\" data-end=\"3783\">jus de fruits<\/strong>, m\u00eame maison.<\/p><\/li><li data-start=\"3798\" data-end=\"3910\"><p data-start=\"3800\" data-end=\"3910\"><img decoding=\"async\" class=\"emoji\" role=\"img\" Occasionnels aussi : le mixage casse les fibres, favorisant une absorption rapide du sucre.<\/p><\/li><\/ul><hr data-start=\"3912\" data-end=\"3915\" \/><h2 data-start=\"3917\" data-end=\"3963\">En conclusion : ne gobez pas les slogans<\/h2><p data-start=\"3965\" data-end=\"4146\">Oui, les fruits sont bons pour la sant\u00e9.
