Elle s\u2019occupait de dauphins entra\u00een\u00e9s pour des missions militaires (d\u00e9tection de mines, s\u00e9curit\u00e9 portuaire).<br data-start=\"371\" data-end=\"374\" \/>En observant ces animaux, elle a remarqu\u00e9 que <strong data-start=\"420\" data-end=\"484\">certains dauphins vieillissaient beaucoup mieux que d\u2019autres<\/strong> : ils restaient actifs, avaient moins de maladies chroniques, et vivaient plus longtemps.<\/p><h3 data-start=\"578\" data-end=\"609\">\ud83d\udd39 Une \u00e9nigme m\u00e9tabolique<\/h3><p data-start=\"610\" data-end=\"867\">Intrigu\u00e9e, elle a commenc\u00e9 \u00e0 analyser leur alimentation et leur m\u00e9tabolisme. C\u2019est l\u00e0 qu\u2019elle a identifi\u00e9 un <strong data-start=\"719\" data-end=\"757\">acide gras satur\u00e9 \u00e0 cha\u00eene impaire<\/strong>, le <strong data-start=\"762\" data-end=\"789\">pentad\u00e9cano\u00efque (C15:0)<\/strong>, pr\u00e9sent en quantit\u00e9 notable chez les dauphins qui vieillissaient le mieux.<\/p><h3 data-start=\"869\" data-end=\"900\">\ud83d\udd39 De l\u2019animal \u00e0 l\u2019humain<\/h3><p data-start=\"901\" data-end=\"1029\">En poursuivant ses recherches, elle a trouv\u00e9 que chez l\u2019homme aussi, un <strong data-start=\"973\" data-end=\"1009\">taux sanguin plus \u00e9lev\u00e9 de C15:0<\/strong> \u00e9tait associ\u00e9 \u00e0 :<\/p><ul data-start=\"1030\" data-end=\"1168\"><li data-start=\"1030\" data-end=\"1062\"><p data-start=\"1032\" data-end=\"1062\">une <strong data-start=\"1036\" data-end=\"1059\">meilleure long\u00e9vit\u00e9<\/strong>,<\/p><\/li><li data-start=\"1063\" data-end=\"1109\"><p data-start=\"1065\" data-end=\"1109\">un <strong data-start=\"1068\" data-end=\"1106\">risque r\u00e9duit de diab\u00e8te de type 2<\/strong>,<\/p><\/li><li data-start=\"1110\" data-end=\"1168\"><p data-start=\"1112\" data-end=\"1168\">une <strong data-start=\"1116\" data-end=\"1165\">meilleure sant\u00e9 cardiovasculaire et h\u00e9patique<\/strong>.<\/p><\/li><\/ul><h3 data-start=\"1170\" data-end=\"1209\">\ud83d\udd39 Une remise en cause des dogmes<\/h3><p data-start=\"1210\" data-end=\"1498\">Pendant des d\u00e9cennies, toutes les graisses satur\u00e9es ont \u00e9t\u00e9 mises dans le m\u00eame panier, vues comme nocives pour le c\u0153ur. data-start=\"1440\" data-end=\"1463\">nutriment essentiel<\/strong> (au m\u00eame titre que les om\u00e9ga-3).<\/p><h3 data-start=\"1500\" data-end=\"1550\">\ud83d\udd39 R\u00e9sultat : une d\u00e9couverte r\u00e9volutionnaire<\/h3><p data-start=\"1551\" data-end=\"1901\">Cette d\u00e9couverte a men\u00e9 \u00e0 plusieurs publications scientifiques (notamment dans <em data-start=\"1630\" la Dre Venn-Watson a mis en lumi\u00e8re un acide gras satur\u00e9 oubli\u00e9, le C15:0, qui pourrait bien changer notre vision de la nutrition et du
